Here are other uses for versatile cucumbers

Cucumbers are great little fruits that contain vitamins B1, B2, B3, B5 and B6, folic acid, vitamin C, calcium, iron, magnesium, phosphorus, potassium and zinc, but according to an Internet search, you can use cucumbers for the following:


» Rub a cucumber slice over bathroom mirrors to prevent fogging during a shower


» Place a few cucumber slices in a small pie pan in your garden to ward off grubs, slugs and other pests which hate the scent created by cucumbers reaction with the aluminum


» Temporarily tighten wrinkled skin or cellulite by rubbing slices of cucumber over problem areas


» Give shoes a temporary polish by rubbing a cut cucumber over them. Not only will you get a shine, but water will be repelled


» Use cut cucumbers to get rid of squeaky hinges, etc.


» Eliminate bad breath by using your tongue to hold a cucumber slice to the roof of your mouth for 30 seconds


» Clean faucets, sinks and stainless steel and remove tarnish with sliced cucumbers.

"If I can't cook it in the microwave or we can't eat it from the refrigerator this week, we're not eating it," I told my husband Sunday as the mercury climbed over 100 degrees.

Nothing says cool to me more than cucumbers. There's just something about cucumbers' refreshing crispness that soothes the fire of a hot summer day. It also could be because cucumbers are more than 90 percent water.

Cucumbers are part of the Cucurbitaceae family, which includes other fruits such as squash, pumpkins and melons. Cucumbers are popular in Greek cuisine and lend a cooling touch to spicy cuisines such as Indian.

There are two basic varieties of cucumbers: Slicing cucumbers and pickling cucumbers. Pickling cucumbers are small and short with bumpy, light-green skins. Slicing cucumbers are field-grown and waxed to increase shelf-life, or greenhouse-grown and shrink-wrapped in plastic to maintain freshness. Waxed cucumbers need to be peeled before consuming. Seedless varieties of cucumbers are easier to digest and often called "burpless" cucumbers.

Store cucumbers in the refrigerator up to seven days. Once cut, cucumbers can be stored 1-2 days. To avoid shriveled, rubbery skin, store cucumbers wrapped in plastic.

Our bodies are always seeking balance, so it makes sense that we’d crave foods to counteract the effect of the weather.

Ayurvedic practitioners, masters of seasonal eating, have these recommendations for eating cooling, summer food:

Favor foods that are cool and liquid. Minimize foods that are hot. Favor foods that are sweet, bitter or astringent. Minimize foods that create heat (spicy, salty or sour). Light proteins are best  (quinoa, almonds, spinach, etc.) Coriander, mint, cardamom, and fennel are nice summer spices. Stick with unrefined sweeteners, but minimize honey and molasses.
