The bounty of … Autumn?!

It's never easy to say goodbye to the largesse of the summer - lush heirloom tomatoes, ears of corn with butter, cherries, berries, peaches and peas. But clearer weather has its own consistent (and stronger) pleasures - and the restaurants are ready to harvest happy to get on their roots.

Abigail Cafe and Wine Bar: The eponymous Abigail Abigail Cafe and Wine Bar is not too many tears for the loss of summer vegetables. "The corn and tomatoes are actually still good until October", "Abigail said Hitchcock."And I absolutely love squash, dark green leaves, starchy tubers and pumpkins." Northeast Kingdom: This restaurant in Vermont by-way-of-Bushwick puts special emphasis on organic gardening and seasonal food, and fall offers a playground inspired to accomplish chef Kevin Adey. Crispy pork cheek with apple salad, venison chili, pasta with wild mushrooms, and fry the potato skins with sour cream and smoked trout roe deer are all confirmed additions to the menu, and a makeover (top secret!) For the burger house cheered.

The Farm on Adderley: Be sure to try Porchetta di Testa of the farm on Adderley fall, cured and poached served with kabocha squash head of pigs roasted peppers and inheritance. "I like this dish right as we are on the transition from summer and fall," said Chief Tom Kearney. "I get to use Jimmy Nardello peppers, grown from seeds that I bought at Seed Savers Exchange, and they are unreal. Peppers are usually about as sexy as the beige paint, but they take on a quality almost dried after they are cooked ... the flavors are so concentrated."
